During the week it can be difficult at times to prep a healthier lunch to eat throughout the week. Don’t worry, you’re not the only one…I absolutely struggle!! Between trying to make a healthier breakfast and dinner sometimes I just don’t have the time. However, I’m here to tell you that these Chipotle Chicken Burrito Bowls are my go to! Think of them as somewhat healthier (and cheaper) version of the Burrito bowls from Chipotle. The best part about these Chipotle Chicken Burrito Bowls are that they are completely customizable, so you can make it your own by using cauliflower rice instead of white rice, chicken, beef or even shrimp! This is great because let’s be honest, meal prep burrito bowls can get a little boring throughout the week if you don’t switch things up a bit. The ingredients can also be made ahead of time. Now, I’m sharing these on a Monday in the hopes that you will get inspired and spend some time tonight or sometime this week prepping these.

Chipotle Chicken Burrito Bowls
Ingredients
- 2-3 Cups White rice
- 2½ lbs Thinly sliced chicken breast
- 1 Can Black beans, drained and rinsed
- 2-3 Cups Frozen corn
- 1½ Cup Cherry tomatoes, chopped
- 2 Avacados, sliced
- Limes (optional)
- 1/2 Cup Shredded cheddar cheese
- McCormick Chipotle seasoing, as needed
- Canola oil, as needed
Instructions
- Cook rice according to package instructions and set aside.
- Season the chicken breast with the chipotle seasoning.
- Heat canola oil in a medium sized skillet over medium high heat. Add seasoned chicken breast.
- Cook chicken about 4-5 minutes on each side until cooked through.
- Set chicken aside and let rest prior to slicing.
- Divide rice into meal prep containers. Top with sliced chicken black beans, corn, tomatoes, and sour cream. Enjoy!
