Easy Cookies and Cream Icebox Cake
Ingredients
For the Icebox Cake
- 2 Family Packages of Oreo Cookies
- 3 Cups Cold Heavy Whipping Cream
- 1/3 Cup Powdered Sugar
- 2 Teaspoons Vanilla Extract
For the Whipped Chocolate Layer
- 1 ¾ Cup Cold Whole Milk
- 1 3.9 Oz Box Chocolate Instant Pudding Mix
Instructions
- Line a 9x9 dish with parchment paper or plastic wrap, leaving some overhang on the sides. This will make it easier to lift and slice the icebox cake once it has chilled.
- Add the chocolate instant pudding mix to the cold whole milk and whisk until smooth. Let the pudding mixture sit for about 5 minutes to thicken and set.
- In a large mixing bowl, add the cold heavy whipping cream, and mix just until it starts to slightly thicken (it’ll still be a little loose). Then add the powdered sugar, and vanilla extract. Beat with a hand mixer or stand mixer until stiff peaks form.
- Gently fold the prepared chocolate pudding into the whipped cream mixture until fully combined and smooth.
- Arrange a layer of Oreo cookies in the bottom of the prepared pan, breaking cookies as needed to fill in any gaps. Spread a layer of the chocolate cream mixture over the cookies, then repeat the layers until all of the cream mixture is used, finishing with a layer of the chocolate cream on top. Add crushed oreos on top.
- Cover the icebox cake and refrigerate for at least 6 hours, preferably overnight, to allow the cookies to soften and the layers to set.
- Before serving, use the parchment paper or plastic wrap to gently lift the icebox cake from the pan. Slice and enjoy!
