Make-Ahead Freezer Breakfast Sandwiches
Equipment
- Parchment Paper
- Large freezer Bag
Ingredients
- 12 Eggs
- ¼ Cup Milk
- ¼ Cup Whole Milk
- 2 Tablespoons Chives, Chopped
- 1 Teaspoon Rubbed Sage
- 2 Pounds Ground Chicken
- 2 ½ Tablespoons Maple Syrup
- ½ Teaspoon Garlic Powder
- 1 Teaspoon Smoked Paprika
- ½ Teaspoon Onion Powder
- Kosher Salt And Black Pepper, As Needed
- Softened Butter, As Needed
- 6-9 English Muffins
- 9 Slices Sharp Cheddar Cheese
- Non Stick Cooking Spray
- Avocado or Canola Oil
Instructions
- Preheat the oven to 350°F, and spray a 9x14 baking pan with non stick cooking spray and set aside.
- In a large bowl, whisk together the eggs, whole milk, chopped chives, kosher salt, and black pepper until fully combined.
- Pour the egg mixture into a greased 9x14 baking dish and bake until set. Remove from the oven and allow to cool slightly, then use a circle biscuit cutter or cup the size of the English muffins and cut out 6 circles.
- In a separate bowl, combine the ground chicken with maple syrup, garlic powder, smoked paprika, onion powder, rubbed sage, kosher salt, and black pepper. Mix until well combined. Form patties a little large in diameter than the English muffin because they will shrink up a bit.
- Add a little neutral oil to the pan and cook the patties on both sides in a skillet over medium heat, until fully cooked through. The internal temp should read 165°F. Remove from heat and let cool slightly.
- Lightly spread softened butter onto each English muffin half and toast until lightly golden. Remove and let cool completely.
- Assemble the sandwiches by layering cooked patties, egg portions, and a slice of sharp cheddar cheese onto the toasted English muffins. Top with the remaining muffin halves. You will have some egg scraps left over so I just used those to add to another sandwich and added a slice of cheese on top to hold it together. Not wasting any food over here! Lol
- Wrap each sandwich individually and store in the freezer bag and place in the freezer until ready to use. Reheat in the microwave on 2ish minutes in the parchment paper when ready to eat. Enjoy!
