One Pan Smothered Chicken
Ingredients
For the Chicken
- 2-2½ lbs Mix of Bone-In Chicken Thighs and Drumsticks
- 4 Tablespoons All-Purpose Flour
- ½ Yellow Onion, Sliced
- ½ Red Bell Pepper, Sliced
- ½ Green Bell Pepper, Sliced
- ½ Yellow Bell Pepper, Sliced
- 3 Tablespoons Heavy Cream
- 4 Cups Reduced-Sodium Chicken Broth
- 1 Tablespoon Worcestershire Sauce
- Avocado Oil As Needed For Searing The Chicken
- Kosher Salt And Black Pepper, To Taste
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Paprika
- 1 Teaspoon Chili Powder
- 1 Teaspoon Onion Powder
- 1 Teaspoon Creole Seasoning
- ½ Teaspoon Old Bay Seasoning
- ½ Teaspoon Ground Cumin
- 1 Teaspoon Dried Thyme
For The Gravy
- ⅓ Cup Reserved Chicken Cooking Liquid
- 1 Tablespoon All-Purpose Flour
Instructions
- Coat the chicken with avocado oil, then season generously with kosher salt and black pepper. In a small bowl, combine the garlic powder, paprika, chili powder, onion powder, creole seasoning, old Bay seasoning, cumin, and dried thyme. Sprinkle the seasoning mixture evenly over the chicken, combine making sure each piece is well coated.
- Heat a large skillet or cast iron over medium-high heat and add enough avocado oil to sear the chicken. Once the oil is hot, add the chicken and sear until golden brown on both sides, about 4–5ish minutes per side. The chicken does not need to be fully cooked at this stage. Remove the chicken from the pan and set aside and keep warm.
- Reduce the heat to medium and add the sliced yellow onion, red bell pepper, green bell pepper, and yellow bell pepper to the same pan. Add a little more oil if needed. Sauté the vegetables until they are tender, and add in worcestershire sauce.
- Sprinkle the 4 tablespoons of flour over the veggies and stir until coated. Slowly pour in the chicken broth while stirring to start the process to create a smooth gravy, add in heavy cream, then stir until combined. (You will thicken the gravy a bit more later on)
- Return the chicken to the pan, nestling the pieces into the gravy and vegetables. Cover and simmer until the chicken is cooked through, tender, and reaches an internal temperature of 165°F.
- To thicken the gravy, take a measuring cup and remove about ⅓ cup of the cooking liquid from the pan. Combine the reserved liquid with 1 tablespoon of all purpose flour to create a thickening mixture, then stir it back into the pan until it reaches your desired consistency.
- Serve the smothered chicken warm with the creamy gravy and vegetables spooned over the top. Pair with mashed potatoes, rice, biscuits, or your favorite side dishes. Enjoy!





I’m confused…. it seems like I’m making the gravy twice. How do you stir the 2nd addition of flour into the first gravy and mix it while the chicken is in there?

Hey! If you take a look at instructions (step 6 )in the recipe card it explains in detail what you will do with that additional Tablespoon of flour to make the gravy thicker! As long as you follow the instructions from start to finish you will be all set!
