Pimento Cheese BLT Sandwich
Ingredients
- Pimento Cheese (Homemade or Store bought ) See notes below
- 6 Slices Thick Cut Bacon
- 1 Large Tomato
- 4 Pieces Sourdough Bread
- Washed green leaf Lettuce
- Neutral Oil, as needed to toast the bread
Instructions
- Preheat a skillet over medium heat. Add the thick-cut bacon and cook until crispy and golden brown, flipping as needed. Transfer to a paper towel-lined plate to drain. Set aside.
- Wash and slice the tomato into even slices. If the tomato is juicy, gently pat the slices dry with a paper towel to help prevent the sandwich from becoming soggy.
- Add a little avocado oil or neutral oil of your choice to a pan, and toast the sourdough bread until lightly golden and crisp around the edges. Set aside.
- Wash and thoroughly dry the green leaf lettuce. Tear or cut into pieces that fit the bread.
- Layer one side of the bread with the green leaf lettuce, sliced tomato, and crispy bacon and a generous layer of pimento cheese.
- Top with the remaining slices of toasted sourdough. Gently press the sandwiches together, slice in half and serve. Enjoy!
