Pumpkin Pie Overnight Oats will make your mornings much easier! They are quick and easy to make and perfect for an on the go breakfast.
I usually try to start my day with some sort of breakfast. I feel like it totally sets the tone for better eating habits for me throughout the day. Whenever I skip breakfast I end up eating the most random things or huge portions during the day which isn’t the best thing to do. Anyway, I don’t always have time to make breakfast in the morning so these overnight oats definitely come in handy. My son also loves them hot or cold!
The base “recipe” for overnight oats is fairly simple! It literally only requires a handful of ingredients which I’m sure you already have handy with the exception of pumpkin puree unless you’re a crazy pumpkin lover and keep it stocked in your pantry. The hardest part is getting the right ratio of oats to liquid. Most of the time I just eyeball it but usually try and aim for a 1:1 ratio of rolled oats to milk. The good thing is you can always add more milk later if needed.

CAN I USE STEEL CUT OATS?
I don’t recommend using steel cut oats because they will not absorb as much milk as rolled oats so the texture will not be the same and they may not turn out the best.
DO I HAVE TO “COOK” THE OVERNIGHT OATS?
Nope! The best part about this recipe is that there’s no cooking involved. When the oatmeal soaks into the milk with the spices they create the perfect, creamy texture that tastes just like cooked oats.
HOW LONG DO OVERNIGHT OATS NEED TO SOAK?
Given the name, you’d assume overnight oats need to soak overnight, right? But you can actually make them in 2-4 hours if you’re in a hurry. I’ve done this several times in the past and they always came out fine! For true overnight oats I recommend at least 8 hours.
HOW DO I STORE OVERNIGHT OATS?
These pumpkin pie overnight oats can be stored in the refrigerator in an airtight container or mason jar for up to 3-4 ish days. Just be sure to give them a stir if they’ve been sitting for a couple of days in the fridge and/or add another splash or two of almond milk if they’ve thickened up too much.
HOW LONG DO OVERNIGHT OATS STAY FRESH?
When stored in an airtight container in the fridge overnight oats should last up to 3-4 days. They will soften more and become a little mushy the longer they sit so I find they’re best between 1-3 days. These are great to meal prep for breakfast during the week!

Pumpkin Pie Overnight Oats
Ingredients
- ½ Cup Quick Oats
- ½ Cup Vanilla Almond Milk + 3 Tablespoons
- 1 Tablespoon Vanilla Extract
- 1 Teaspoon Maple Extract
- 1 Teaspoon Chia Seeds
- 3 Tablespoons Pumpkin Puree
- ¼ Teaspoon Pumpkin Pie Spice
- ½ Teaspoon Ground Cinnamon
- 1 Teaspoon Light Brown Sugar
- Chopped Pecans for Topping
Instructions
- In a medium bowl, mix together all of the ingredients until well combined.
- Taste and add more spices, vanilla extract or almond milk if needed. Pour oats into mason jars and place in the fridge overnight. Top with chopped pecans, enjoy!
