Ingredients
For The Toasted Marshmallow Buttercream Filling
- 1 Cup Mini Marshmallows Toasted
- 1 Stick ½ Cup Unsalted Butter, Room Temperature
- 2 Cups Sifted Powdered Sugar
- ¼ Cup Heavy Whipping Cream
- 1 Teaspoon Vanilla Extract
- Pinch or Two Of Kosher Salt As Needed
For The S’mores Cookies
- 2 Cups All-Purpose Flour Spooned And Leveled
- 1 Cup Finely Crushed Graham Crackers About 9 Sleeves
- 1 Teaspoon Baking Powder
- 1 Teaspoon Baking Soda
- 1 Teaspoon Cornstarch
- ½ Teaspoon Kosher Salt
- ½ Cup Granulated Sugar
- ¾ Cup Light Brown Sugar Packed
- 1 Cup Unsalted Brown Butter 2 Sticks, Slightly Cooled
- 1 Teaspoon Molasses Optional
- 1 Large Egg Room Temperature
- 1 Large Egg Yolk Room Temperature
- 1 Teaspoon Vanilla Extract or Vanilla Paste
- Nonstick Cooking Spray
For The Dipped Chocolate
- 1½ Cups Milk Chocolate Or Melting Wafers
- Crushed Graham Crackers For Topping
Instructions
- Add the butter and add it to a light colored, medium saucepan over medium heat. Stir as it melts, continuing to stir as it changes from melted to a bright yellow color. The butter will become loud and bubbly, then turn foamy and quiet. This is when the browning begins. Keep stirring and watch closely as it turns a rich amber color. Immediately remove from heat and pour into a measuring glass to stop the cooking process. Set aside to cool. (Use a light color pan so that you can actually see the butter changing in color so it doesn't burn).
- While the butter cools, whisk together the flour, cornstarch, kosher salt, baking soda, crushed graham cracker, and baking powder in a medium bowl. Set aside.
- Once the brown butter has cooled (it can be slightly warm but not hot), add it to a large mixing bowl along with the light brown sugar and granulated sugar. Whisk until fully combined and the sugar has dissolved.
- Add the egg and egg yolk, whisking until well incorporated. Then mix in the vanilla paste or extract.
- Gradually add the dry ingredients to the wet ingredients, mixing a little at a time until fully incorporated and no flour streaks remain.
- Chill the dough for about 15 to 20 minutes to give the butter enough time to solidify before baking.
- Preheat the oven to 350°F. Line a baking sheet with parchment paper. Using a 3 Tablespoon cookie scoop, scoop the dough into evenly sized portions and place them on the prepared baking sheet, leaving space between each cookie for spreading.
- Bake the cookies for about 10–12 minutes, or until the edges are set and the centers still look slightly soft. Avoid overbaking if you want soft, chewy cookies.
- Remove the baking sheet from the oven and allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, line a sheet tray with parchment paper and lightly spray it with nonstick cooking spray. Arrange the mini marshmallows in a single layer on the prepared tray. Turn the oven to broil and place the tray under the broiler, watching closely, until the marshmallows are golden brown and toasted. Like 1ish minute max because they will burn, so do not walk away from the oven. Remove and allow the toasted marshmallows to cool slightly.
- In a mixing bowl, beat the room-temperature butter until light, smooth and creamy. Gradually add the sifted powdered sugar, followed by the heavy whipping cream, vanilla, and a pinch or two of kosher salt. Add the toasted marshmallows and whip the mixture until light, fluffy, and smooth. Continue whipping long enough for the buttercream to become creamy rather than grainy. Set aside.
- Melt the milk chocolate or melting wafers in a microwave-safe bowl in short 30 second intervals, stirring between each interval until smooth. Allow the chocolate to cool slightly before dipping the cookies.
- Pair the cooled cookies with similar sizes. Spread or pipe a layer of marshmallow buttercream onto the flat side of one cookie, then gently place another cookie on top to create a sandwich.
- Option 1: Dip the assembled cookies. Dip the assembled sandwich cookies into the slightly cooled melted chocolate, coating as much or as little of the cookie as desired. Place them on parchment paper and immediately sprinkle with crushed graham crackers. Allow the chocolate to cool and set completely.
- Option 2: Dip the top cookies before assembling. Dip the top cookie of each sandwich into the slightly cooled melted chocolate. Place the chocolate-dipped cookies on parchment paper and sprinkle with crushed graham crackers while the chocolate is still wet.
