The Best Sticky Peach Cobbler Pudding
Ingredients
For The Cake
- 1 Cup All Purpose Flour
- 1 Teaspoon Baking Soda
- 1½ Teaspoons Baking Powder
- 1 Cup Peach Jam
- 4 Tablespoons Unsalted Butter, Room Temperature
- ½ Cup Dark Brown Sugar
- ½ Teaspoon Ground Cinnamon
- ¼ Teaspoon Kosher Salt
- 1 Teaspoon Vanilla Extract
- 2 Eggs, Room Temperature
- Vanilla Ice Cream, Optional
- Non-Stick Cooking Spray, as needed
For The Sauce
- 1 Large Fresh Peach Chopped
- 5 Tablespoons Unsalted Butter
- ½ Cup Dark Brown Sugar
- 4 Tablespoons Peach Jam
- ⅓ Cup Heavy Cream
For The Crumble Topping (Optional)
- 1 Cup All-Purpose Flour
- ½ Cup Light Brown Sugar
- 1 Teaspoon Ground Cinnamon
- Pinch Kosher Salt
- 1 Stick Cold Butter Cubed
Instructions
- Preheat your oven to 350°F and line a 8 inch baking pan with parchment paper and spray with non sick cooking spray and set aside.
- In a large bowl, whisk together the flour, baking soda, baking powder, kosher salt, and ground cinnamon. Set aside.
- In a separate bowl, add the softened butter and dark brown sugar together mix together until smooth. Be sure to scrape down the sides of the bowl.
- Add the vanilla extract and eggs one at a time and mix until fully combined. Add in the peach jam.
- Gradually add the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared baking dish and spread evenly. Bake in the oven for about 25-30 minutes. Checking to make sure you don’t over bake.
- In a medium saucepan over medium heat, combine the chopped peach, butter, dark brown sugar, vanilla, and peach jam. Stir until the butter is melted and the mixture is smooth. Add the heavy cream and continue to cook for 2–3ish minutes until slightly thickened. Remove from heat and set aside.
- In a separate bowl, prepare the crumble ingredients by adding the flour, light brown sugar, cinnamon, and a pinch of kosher salt to a small bowl and whisk.
- Add the cold cubed butter and use a pastry cutter or your hands to mix until a crumbly texture forms.
- Line a sheet tray with parchment paper and sprinkle the crumble topping in one single layer and bake for about 10-15ish minutes, or until the top is golden brown and the edges are bubbling.
- Let cool for 10–15 minutes before adding as a topping when ready to serve the sticky peach cobbler pudding.
- Once the pudding is finished baking, let cool for just a few minutes. Slice and serve warm, with the peach caramel sauce, vanilla ice cream, and the crumble topping. Enjoy!
