These Shredded Beef Enchiladas are super easy to make and cooked in a simple homemade enchilada sauce! They’re stuffed with juicy, tender slow cooked Mexican inspired shredded beef and topped with cheese then baked to perfection!

Ingredients – 2 lbs Chuck Roast – 2 Tablespoons Canola Oil for Searing the Beef – 1 Tablespoon Chili Powder – 1 Tablespoon Garlic Powder – 1 Tablespoon Onion Powder – 1 Tablespoon Cumin – 1 Tablespoon Smoked Paprika
