For the cake
Pre-heat oven to 350 degrees.
Mix all cake ingredients in a bowl.
Pour into 2 greased and floured 9-inch round pans. Bake for 25-30 minutes or until toothpick comes out clean. Let cool.
Cut the cakes in half then into cubes. Reserve the rest for later.
For the cream cheese icing
In a stand mixing bowl, mix softened cream cheese, powdered sugar, butter and vanilla extract and heavy cream. Mix until well combined and is desired consistency.
Place about 1/2 cup of cake cubes in 4-8 glasses or jars. Pipe the cheesecake icing on top and continue to layer.
Top each parfait with chopped walnuts.
For the rest of the cake top with cream cheese icing and walnuts. Enjoy!
